Favorite Summer Meal
Last night I enjoyed my first ears of Fincel's sweet corn - which is a staple of summer fare here in the Tri-State area. That got me thinking of what my all-time favorite summer meal would consist of (I think about food often but, surprisingly, have never pondered this topic). Here is what I concluded:
- A BLT - A BLT would not be in my top 10 or even top 20 favorite things to eat outside of summer. But with fresh tomatoes, a healthy (not really) helping of bacon, crisp lettuce, creamy mayonnaise and lightly toasted bread, it really is the sandwich of summer
- Sweet corn - Add a little butter, salt and pepper. Make sure toothpicks or floss are handy
- Potato Salad - I've become a huge fan of potato salad over the years and do not have one variation or recipe that I prefer
- Watermelon - This juicy, refreshing melon is the perfect way to cap off a summer meal
Of course, anything cooked on the grill is always good too! As long as you accompany your meal with sweet corn, you can't go too wrong.
