I've blogged that I love grilling and on Sunday I made a chipotle crusted pork tenderloin that turned out great!

The recipe calls for the following:

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3 tablespoons chipotle chile powder
  • 1 1/2 teaspoons salt
  • 4 tablespoons brown sugar
  • 2 (3/4 pound) pork tenderloin

Directions

  1. Preheat grill for medium-high heat.
  2. In a large resealable plastic bag, combine the onion powder, garlic powder, chipotle chile powder, salt, and brown sugar. Place tenderloins in bag and shake, coating meat evenly. Refrigerate for 10 to 15 minutes.
  3. Lightly oil grill grate, and arrange meat on grate. Cook for 20 minutes, turning meat every 5 minutes. Remove from grill, let stand for 5 to 10 minutes before slicing.
What I Did Differently
  • I spent 10 minutes sifting through all of the spices at a local grocery store and couldn't find chipotle chile powder. I used chipotle SEASONING and hot chile powder. I would suggest scaling back on the salt as this approach will add more sodium than then original recipe calls for
  • I sliced a 2 1/2 lb tenderloin in half and had it on the grill at 375-400 degrees for 30-35 minutes. It was tender, but I will be cooking at a lower heat for an hour next time.
