Vegan Banana Pancakes

Yields 8 servings

  • 2 mashed ripe bananas
  • 4 tsp baking powder
  • 2 cups almond milk
  • 2 cups regular or gluten-free all-purpose flour
  • Vegan butter for frying

Optional Ingredients

  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 tbsp maple syrup

  1. Mash the ripe bananas and mix them with almond milk, baking powder, and optional ingredients. Then, mix in the flour. The batter will be slightly lumpy, this is ok!
  2. Heat a skillet to medium and add a little butter. Once the butter is melted and begins to bubble, scoop in 3-4 tbsp of the batter per pancake. Cook until bubbles form on the top and then flip. They should be golden brown!
