This Popular Dubuque Food Truck is Becoming a Restaurant
A popular food truck, which finds itself parked at various events around Dubuque and the Tri-States, will be upgrading to a brick-and-mortar establishment, as first reported by the Telegraph Herald.
For the past couple of years, Versus has been completely changing people's expectations for what to expect from food trucks. The concept is simple: "[their] food versus your taste buds." Lucas and Liberty Miller have been serving up Asian cuisine. Versus has everything from beef, chicken, pork, and tofu (for vegetarians) to Banh Mi, a Vietnamese sandwich.
Now, Versus is graduating from solely being a mobile operation to having a restaurant. Lucas and Liberty have purchased the former Buddy's Clubhouse location at 2364 Washington Street, which they plan to turn into "Versus 2.0 Authentic Asian Kitchen/Bar."
Versus has been in business since 2019, and has operated as a food truck since 2021. Now, the couple are set to begin a new chapter in a premier location on Dubuque's North End with a lot of history.
The former Buddy's Clubhouse location is over 100 years old. Buddy's Tap was opened by Teri and Melvin "Buddy" Spiegelhalter back in 1998. Buddy's Clubhouse became locally known for its prime rib along with its soup and salad bar.
For me, it’s about the food and the community as a whole, with us bringing a diversity (in cuisine) that really, nobody else is bringing. We wanted to set ourselves apart from everybody else right off the bat, and we did with the food truck. Now, as we move forward with the restaurant and expand, you’re not limited to where you can get our food.
